Continuing this spirit of discovery, the World Meat Series 2026 Edition II presents The Rare Emerald Wagyu, spotlighting the new-to-Singapore Irish Wagyu. Produced in limited quantities on Kingsbury Farms, Irish Wagyu reflects a “Japanese by design, Irish at heart” philosophy. Carefully bred Wagyu genetics are reared on low-density Irish farms with a strong emphasis on sustainability and animal welfare. Unlike heavily marbled Wagyu, this expression offers a more restrained marbling profile, allowing its natural sweetness, clean finish, and subtle flavour to shine. As a rare arrival to the Singapore market, Bedrock Bar & Grill is among the few to present these coveted cuts, offering diners a unique opportunity to experience Wagyu through a different lens. The Highlights The experience begins with a KrisFlyer-exclusive seasonal Amuse Bouche , setting the tone for the evening. The journey continues with the Eye Round Carpaccio, where thinly sliced Irish Wagyu is paired with arugula, Parmigiano shavings, and a bright lemon vinaigrette, alongside a crisp beetroot sago cracker for added texture. Next, the Dry-Rubbed Flank Steak showcases a bolder profile, seared over high heat and finished with chimichurri, charred corn salsa, and wild garlic oil for a balance of smoke, acidity, and herbaceous notes. A nod to Irish heritage follows with the Guinness-Braised Oyster Blade, slow-cooked until tender in stout, delivering a gentle bittersweet richness. It is paired with buttery mashed potatoes, root vegetables, and fresh herb cress — a refined take on a classic Irish stew. The main course features the Woodfire-Grilled Wagyu Striploin, simply seasoned and cooked over Bedrock’s signature applewood fire. Served with red wine jus, roasted brussels sprouts, crushed hazelnuts, panko breadcrumbs, and an orange and ginger carrot purée, the dish balances richness with aromatic brightness. The experience concludes with a Pistachio Tartlet, combining pistachio cream, chocolate soil, fresh strawberries, and roasted pistachio atop an almond tart shell, offering a polished and satisfying finale. To round off the evening, each pair of guests will also receive a take-home gift of one bottle of Marius Syrah Grenache 2023 , extending the experience beyond the table.
